CARAMELIZED POTATOES 
8 med. potatoes
1/4 c. sugar
4 tbsp. butter
2 tsp. orange rid

Boil potatoes and drain. Heat sugar in heavy pan, stirring constantly over low heat until melted into a golden syrup. Remove from heat. Stir in butter. Add potatoes. Sprinkle orange rind on. Serves 8.
