CREAM - FILLED CONFETTI COOKIES 
COOKIES:

1 c. sugar
1/2 c. butter, softened
1/4 c. shortening
1 tsp. vanilla
2 eggs
2 1/2 c. flour
1 tsp. baking powder
3/4 tsp. salt
1/3 c. multi-colored candy sprinkles

FILLING:

3/4 c. butter, softened
2 c. powdered sugar
1 tsp. vanilla
1 egg
2 to 3 drops red or green food coloring

In a large bowl, combine sugar, butter, shortening, vanilla, eggs; beat well. Add flour, baking powder and salt; mix well. Stir in candy sprinkles. Cover dough with plastic wrap; refrigerate at least 1 hour for easiest handling. Heat oven to 400 degrees on lightly floured surface, roll out dough, 1/3 at a time to 1/8 inch thick. Cut with 2 1/2 inch round cookie cutter. Place 1 inch apart on ungreased cookie sheet. Bake at 400 degrees for 5 to 7 minutes or until light golden brown. Cool 1 minute, then remove from cookie sheet. Cool completely.

Beat filling ingredients, in order given, until light and fluffy. Spread between 2 cookies. Store filled cookies in refrigerator. Makes 3 1/2 dozen cookies.
