CREAM FILLED CONFETTI COOKIES 
COOKIES:

1 c. sugar
1/2 c. softened butter
1/4 c. shortening
1 tsp. vanilla
2 eggs
2 1/2 c. all purpose flour
1 tsp. baking powder
3/4 tsp. salt
1/3 c. multi colored candy sprinkles

FILLING:

3/4 c. butter, softened
2 c. XXXX sugar
1 tsp. vanilla
1 egg
2-3 drops food coloring

In large bowl combine sugar, 1/2 cup butter, shortening, 1 teaspoon vanilla and 2 eggs; beat well. Add flour, baking powder and salt; mix well. Stir in candy sprinkles. Cover dough well and refrigerate for at least an hour.

Heat oven to 350 degrees. On floured surface roll out dough to little over 1/8" thick. Cut out with 2" cookie cutter. Bake in an ungreased cookie sheet until just lightly browned. Cool completely.

In medium bowl beat 3/4 cup butter; gradually add XXXX sugar and blend well. Add 1 teaspoon vanilla and 1 egg; beat until light and fluffy. Can add a few drops of food coloring, then blend well. Spread 1 heaping teaspoon of filling between 2 cookies. Makes about 3 1/2 dozen filled cookies.

Cookie cutters of assorted shapes and sizes can be used.
