BRAN MUFFINS 
3 c. bran flakes
1 c. boiling water
2 eggs
1 1/4 c. sugar or 1 c. honey
2 c. buttermilk
1/2 c. corn or other oil
2 c. whole wheat flour
1/2 c. soy flour
2 1/2 tsp. baking soda

In a large bowl mix bran flakes and water and let stand. Beat eggs, sugar, buttermilk and oil in a medium bowl and add to bran. Mix wheat flour, soy flour and soda and fold into bran. Bake in greased muffin tins. Bake at 375 degrees for 15 minutes. Makes 30.
