SIMPLE ITALIAN CREAM CAKE 
1 box yellow cake mix
1 box instant vanilla pudding
1 1/3 c. water
4 eggs
1/2 c. oil
1 1/3 c. coconut
1 c. chopped pecans

Combine first 5 ingredients in large bowl and blend, beating on medium speed 4 minutes. Stir in coconut and nuts. Pour into greased and floured 10 inch tube pan. Bake at 325 degrees for 60 minutes. Cool 15 minutes.

COCONUT CHEESE TOPPING:

Cream:

1/3 c. butter

Blend:

2 (3 oz.) pkgs. cream cheese

Add:

1 box powdered sugar, alternately with 4 tbsp. milk

Beat well. Add:

1/2 tsp. vanilla
1 c. chopped nuts
1 c. coconut

Spread frosting over cooled cake.
