CORN CHOWDER | |
3 slices bacon, chopped 1 large onion, chopped 3 cloves garlic, minced 1 1/2 cups cut-up potatoes (1/2-inch cubes) 1 cup water or chicken broth 2 cups (16-ounce can) cream-style corn 3 cups milk 1/2 teaspoon salt (or to taste) black pepper, to taste In a saucepan sauté bacon until crisp; remove from pan and save for later. Lightly brown onion in bacon drippings. Add garlic and cook til garlic has softened, Add potatoes and water. Simmer for 10 minutes. Add corn and simmer for another 10 minutes. Stir in milk, salt, and bacon. Heat just until hot. Chopped fresh parsley makes a nice garnish. For a heartier soup, add 2 cups cubed cooked ham. Makes 3 servings, 2 cups each. Submitted by: Belle |
