MANDARIN ORANGE SALAD 
1 bunch leaf lettuce or spinach
1 can mandarin oranges
1/2 c. sliced almonds
1 tbsp. butter
1 tbsp. sugar

DRESSING:

1/2 tsp. salt
2 tbsp. vinegar
2 tbsp. sugar
1/4 c. oil (preferably olive oil)
1 tbsp. parsley

DRESSING: Combine in a jar and shake to mix.

Brown almond slices in butter and sugar. Set aside. Place lettuce and drained mandarin oranges in bowl. Add almonds, toss with dressing and serve.
