MANDARIN SPINACH SALAD 
8 c. washed torn spinach (Janet also uses romaine and reg. lettuce)
1 c. diagonally sliced celery
2 green onions with tops, chopped
1 (11 oz.) can mandarin oranges, drained
1 (2 oz.) Pkg. slivered almonds, toasted

Combine and toss. Add oranges and almonds before serving.

SWEET AND SOUR DRESSING:

1/4 c. vegetable oil
2 tbsp. vinegar
2 tbsp. sugar
5 drops hot sauce (Tabasco)
1 tsp. chopped parsley
1 tsp. salt
Dash of pepper

Combine in a jar. Cover tightly and shake vigorously. Makes approximately 1/2 cup.
