SPINACH MANDARIN SALAD 
1 head red leaf lettuce
1 bunch fresh spinach
1/3 c. green onion, chopped
1/2 c. celery, chopped
1/4 c. parsley, chopped
1 (11 oz.) can mandarin oranges
slivered almonds, chopped walnuts, pine nuts, if desired (choose one)

Wash lettuce and tear (don't use knife to avoid browning) into bite-sized pieces. Wash spinach and trim stems. Combine with ingredients through mandarin oranges. Just before serving toss with dressing and garnish with one of the above nuts, if desired.

DRESSING:

1/2 c. olive oil
1/4 c. tarragon vinegar
2 tbsp. sugar
1/2 tsp. Worcestershire
1 tsp. salt
freshly ground pepper to taste

Whisk ingredients together.
