EASY CHICKEN CACCIATORE | |
2 1/2 - 3 lb. broiler chicken, cut up 2 tbsp. olive oil 2 (14 1/2 oz.) cans Italian style stewed tomatoes 1 c. tomato paste 2 c. sliced mushrooms 1 c. sliced zucchini 1 tsp. basil, crushed Hot cooked pasta Brown chicken in oil for 10 minutes, turning occasionally; drain. Add tomatoes, paste, mushrooms, zucchini and basil. Salt and pepper to taste. Cover and simmer 25 minutes; serve over pasta. |
