EASY CHICKEN SPINACH CASSEROLE 
1 (10 oz.) pkg. frozen chopped spinach, cooked & drained well
2 c. chopped, cooked chicken
1 (10 3/4 oz.) can cream of mushroom (or chicken) soup
1 beaten egg
1 (10 oz.) can mushroom pieces, drained
1 c. shredded cheddar cheese
1/2 c. Italian bread crumbs
4 tbsp. butter, melted

Preheat oven to 350 degrees. Cook package of frozen spinach and drain well. In large bowl, mix spinach, chicken, cream of mushroom soup, egg, mushrooms and cheddar. Pour mixture into a 9"x13" greased baking dish. Mix bread crumbs and melted butter together until moist and crumbly. Top the mixture with it and bake in oven, uncovered, 40 minutes until bubbly and well heated through. Serves 4. Use turkey instead of chicken for variation.
