EASY CHICKEN CACCIATORE 
2 1/2 to 3 lb. boiler-frying chicken, cut up
2 tbsp. olive oil
2 cans (14 1/2 oz. each) DelMonte Italian style stewed tomatoes
2 c. sliced mushrooms
1 can (6 oz.) DelMonte tomato paste
1 c. sliced zucchini
1 tsp. basil, crushed
Hot cooked pasta

Brown chicken in oil, 10 minutes, turning occasionally. Drain. Add tomatoes, tomato paste, mushrooms, zucchini and basil. Salt and pepper to taste, if desired.

Cover and simmer 25 minutes. Serve over pasta. Garnish with parsley, if desired. 4 to 6 servings.

Preparation Time: 5 minutes. Cooking time: 35 minutes.
