CHICKEN CACCIATORE CASSEROLE 
3 tbsp. oil
1 med. onion
8 oz. spaghetti
1/2 tsp. oregano
1 c. hot water
sliced olives
2 cloves garlic, sliced
2 cans (6 oz. each) tomato paste
1 1/2 tsp. salt
1/2 tsp. pepper
2 cans (5 oz. each) of boned chicken or take meat from a fresh, cooked chicken

Heat oil. Add garlic, onion and brown. Add tomato paste, water and seasonings. Simmer for 10 minutes until sauce thickens and flavors blend. Grease 2 quart casserole. Arrange cooked spaghetti casserole. Add 1/2 of the tomato sauce. Break the chicken into chunks and add to the casserole. Add remaining tomato sauce and sliced olives. Bake at 350 degrees for 45 to 60 minutes.

The spaghetti needs to be cook as per box while the sauce is simmering. Also, breaking the spaghetti before cooking into smaller pieces makes the casserole easier to eat. A teaspoon of sugar in the sauce will cut the bitterness.
