CHICKEN CACCIATORE CASSEROLE | |
3 tbsp. oil 1 med. onion 8 oz. spaghetti 1/2 tsp. oregano 1 c. hot water sliced olives 2 cloves garlic, sliced 2 cans (6 oz. each) tomato paste 1 1/2 tsp. salt 1/2 tsp. pepper 2 cans (5 oz. each) of boned chicken or take meat from a fresh, cooked chicken Heat oil. Add garlic, onion and brown. Add tomato paste, water and seasonings. Simmer for 10 minutes until sauce thickens and flavors blend. Grease 2 quart casserole. Arrange cooked spaghetti casserole. Add 1/2 of the tomato sauce. Break the chicken into chunks and add to the casserole. Add remaining tomato sauce and sliced olives. Bake at 350 degrees for 45 to 60 minutes. |
