OVEN BAKED CHICKEN CACCIATORE | |
1 (3 lb.) broiler, fryer, cut up 1 lb. Italian sweet peppers, preboiled 5 minutes & peeled 1 can or fresh mushroom slices, drained, if using canned Salt Pepper to taste Garlic powder 1 qt. jar prepared spaghetti gravy 3 ripe tomatoes, preboiled 3 minutes and quartered 1 lb. can tomato wedges or slices, drained In casserole, glass oven dish or roaster, place chicken parts skin up. Put generous dab of thick gravy on each. Cover lightly with foil and bake about 45 minutes to 1 hour at 325 degrees. Meanwhile, prepare peppers, tomatoes, and mushrooms, salt and pepper and garlic powder to taste. Top all with additional gravy. Continue baking, uncovered 45 minutes to 1 hour longer. Serve with own gravy on macaroni or spaghetti. Can be prepared ahead and reheated. Increase ingredients for each chicken if done in large batches for company. |
