SWISS CHEESE BROCCOLI 
Water
1 lb. broccoli, coarsely chopped
Salt
3 tbsp. butter
2 tbsp. flour
3 tbsp. chopped onion
1 1/4 c. milk
2 c. shredded Swiss cheese
2 eggs, beaten

Grease a 10 x 6 inch baking dish. Cook broccoli in water and 1/2 teaspoon salt for 10 minutes. Drain and set aside.

In a 2 quart pan over medium heat melt butter. Stir in flour and 1 1/2 teaspoons salt until smooth. Add onion and cook 1 minute. Slowly stir in milk. Cook, stirring constantly until mixture is thick. Stir in cheese and broccoli. Add eggs. Pour in greased baking dish and bake 30 minutes at 325 degrees or until firm.
