SKILLET LASAGNA 
1 1/2 lbs. ground beef
1 onion, chopped
1 green pepper, chopped
1 (2 lb.) jar spaghetti sauce with mushrooms
1 tbsp. oregano
1/2 c. cooking sherry (optional)
4 med. onions, quartered
8 carrots, cut into 1 inch chunks

Brown ground beef in a 4 1/2 quart Dutch oven over medium heat. Drain; add onion, green pepper, sauce and seasonings. Cover and simmer 10-15 minutes. Lightly butter a Club 10 inch fry pan and assemble as follows.

Spread 2 tablespoons sauce across bottom. Place 3 lasagna noodles across bottom, then half of remaining sauce, Parmesan cheese and Mozzarella cheese. Repeat. Cover and place on medium heat. When lid is hot to touch, reduce heat to low and cook 30 minutes. Remove from heat. Set lid ajar and let stand 10 minutes before cutting. 6 servings.
