YUMMY LEMON CAKE 
1 pkg. lemon cake mix (do NOT use pudding cake mix)
1 (3 oz. size) lemon gelatin
4 eggs
2/3 c. oil
3/4 c. water

Combine cake mix and gelatin in mixing bowl. Add eggs, oil and water. Beat at medium speed until well blended, about 3 minutes. pour into prepared 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 40 to 45 minutes or until cake edges pull away from sides of pan. Toothpick test does NOT work very well as this is a very moist cake.

Immediately upon removing from oven, prick thoroughly with fork. Spread Glaze over cake.

GLAZE:

2 c. confectioners' sugar
1/4 c. lemon juice (juice of 2 lemons)
2 tsp. grated lemon peel
