EASY LEMON BARS 
1 (8 1/4 oz.) pkg. lemon cake mix
1/4 c. vegetable oil
1 egg
1 (14 oz.) can sweetened condensed milk
1 (4 serving size) pkg. lemon flavor pudding mix (not instant)
1 1/2 tsp. grated lemon rind

Reserving 1 1/2 cups lemon cake mix for top.

In large mixing bowl, combine cake mix, oil, egg. Beat on medium speed until crumbly. Reserve 1 1/2 cups crumb mixture. Press remainder of crumb mixture firmly on bottom of greased 13x9 inch baking pan.

In small mixing bowl, beat condensed milk and pudding mix until smooth. Stir in grated lemon rind. Spread over prepared crust. Top with reserved crumb mixture. Bake 20 to 25 minutes until set. Cool; cut into bars.

LEMON GLAZE:

In small saucepan, combine: 4 to 5 tsp. water 1/2 tsp. lemon peel

Spread on top of cookies.
