FRESH LEMON CAKE BARS 
1 med. lemon
1 c. water
1/2 c. butter, softened
1 (2 layer) yellow cake mix
1 egg
1/2 c. flaked coconut

Cut lemon in chunks, removing the seeds. (Do not peel.) Put chunks in blender with the water and puree. Add butter and egg and blend until well mixed. In bowl combine cake mix and lemon mixture. Beat with wooden spoon until well blended. Spread in greased jelly roll pan. Sprinkle with coconut. Bake at 350 degrees for 20 to 25 minutes. Cut in bars.

Coconut can be omitted. Bake as directed, cool and frost with powdered sugar frosting.
