BEAN SPROUT SALAD 
3 c. fresh bean sprouts
2 med. tomatoes, cut in wedges
1 cucumber, thinly sliced
1 avocado, peeled and sliced
Salad greens
1/2 c salad oil
2 tbsp. fresh lemon juice
2 tbsp. vinegar
3/4 tsp. salt
1/8 tsp. sugar
1/2 tsp. dry mustard
1/8 tsp. pepper

Combine the bean sprouts, tomato wedges, cucumber slices, and avocado slices in a salad bowl. Garnish the edges of the bowl with salad greens. Just before serving, mix the oil, lemon juice, vinegar, salt, sugar, dry mustard, and pepper; pour this mixture over the salad as a dressing. Makes 4 to 6 servings.
