POPPY SEED CUPCAKES

1 pkg. Duncan Hines yellow cake mix
3/4 c. Crisco
1 c. water
2 tbsp. poppy seed
2 pkg. butterscotch pudding mix
4 eggs

Combine all ingredients and mix for 4 minutes with electric beater. This can make regular cupcakes or small cupcakes.

ICING FOR CUPCAKES:

6 oz. cream cheese, softened
1 tsp. vanilla
3 tbsp. butter
1/2 box 4x sugar
1/2 c. nuts

Cream together and spread on cupcakes.

Hi Cristi,

Crisco refers to shortening. This makes about a dozen depending up the size of the cupcake pan you use.

If you have any extra, you can thin it out with milk to the consistency of pancakes and make a few pancakes with it.

If you put the extra into a second cupcake pan, fill the empty wells halfway up with water.
