CAULIFLOWER ITALIAN STYLE 
1 head cauliflower, broken into pieces
3 tbsp. oil
3 cloves garlic
1/2 tsp. salt
1 c. tomato, peeled and chopped
1/4 c. grated Parmesan cheese
1 tbsp. chopped parsley
1 1/2 tsp. garlic salt

Steam cauliflower about 5 minutes. Remove from heat and set aside. Slowly heat oil in large, heavy skillet. Saute garlic until golden, about 3 minutes. Remove garlic and discard. In same skillet, combine cauliflower, salt, tomato and garlic salt. Cook, stirring about 3 minutes. Turn into serving dish and sprinkle with cheese and parsley.
