PINEAPPLE SOY MARINADE | |
This recipe was given to me by a friend 20 years ago and everyone just loves it and asks for the recipe! 3 lb. boneless skinless chicken breasts Marinade: 1/3 cup soy sauce 1/3 cup Italian dressing 1/3 cup pineapple juice 1/4 tsp. ground ginger 1 clove garlic minced Combine ingredients in a gallon size bag and marinate chicken overnight in refrigerator. Grill on grill or under broiler for 5 minutes on each side or until juices run clear. Discard unused marinade. Note: Be careful not to overcook or the chicken will become dry. I always make extra and use the leftover chicken on a salad or in quesadillias but it maintains its flavor when just reheated. Hope you all enjoy as much as we do. Submitted by: Nancy Vestal |
