“STUFFED SAVORY LATKES” IS IN:

STUFFED SAVORY LATKES 
1 cup flour
Pinch salt
1 egg, well beaten
1/2 cup milk

STUFFING:

6 tablespoons salmon
1 egg, beaten
1 tablespoons minced onion
1/2 teaspoon each of thyme, oregano and dill
2 tablespoons bread crumbs

Sift 1 cup of flour and a pinch of salt into a bowl. Make a hole in the center and add one well beaten egg and 1/2 cup milk. Use a large spoon to work in the flour so that the batter in the center is smooth. Then add 1/2 cup milk and beat 2 for minutes until batter is light.

Slowly pour just enough batter into hot pan to cover the bottom of the pan. When latke is set and lightly browned on one side, toss to cook on other side. Turn out onto a sugared paper or towel.

For stuffing, add - mashed 6 tablespoons, salmon, beaten egg, 1 tablespoon minced onion, 1/2 teaspoon each of thyme, oregano and dill and 2 tablespoons bread crumbs. Place 1 tablespoon of this savory mixture in each pancake and roll up. Place in an oiled shallow baking dish and keep the pancakes warm until ready to serve.
