BETTY'S CRACKER PUDDING 
1 qt. milk
2 eggs, separated
2/3 c. sugar (granulated)
2 c. broken saltine crackers
1 c. grated coconuts (medium shred)
1 tsp. vanilla

While warming milk, beat egg yolks and sugar until frothy. Add to hot milk. Stir in cracker and coconut, cook until thick. Remove from heat and add stiffly beaten egg whites and vanilla. Serves 8.
