INDIAN MEAL PUDDING 
1/2 c. white cornmeal
1 1/2 c. water
1/4 lb. butter
1 egg
3 egg yolks
1/2 c. sugar
1/4 c. white wine
1 tsp. nutmeg
1/2 tsp. mace

Preheat oven to 400 degrees.

Grease an 8" square glass baking dish.

Make a cornmeal mush. Combine the cornmeal with the water. Bring the mixture to a boil, stirring continuously. Reduce to low heat and cook the mixture for 20 to 30 minutes, stirring continuously until the mixture thickens.

Mix the butter into the warm mush to melt the butter.

Combine and beat the egg and the egg yolks until they are light and fluffy.

Add the sugar to the eggs and beat until thickened.

Mix the egg mixture into the mush. Add the wine, nutmeg and mace. Mix well.

Pour into the prepared baking dish.

Lower the oven temperature to 350 degrees. Bake for 30 to 40 minutes. Serve hot or warm.
