SPINACH WITH FETA AND OLIVES 
4 packages (10 ounces each) cleaned, fresh spinach
1 cup (6 ounces) crumbled feta cheese
1/2 cup chopped, canned pitted black olives
2 tablespoons extra-virgin olive oil
Salt and black pepper, to taste

Quick, easy and nourishing featuring a flavor of the Mediterranean, this side dish is loaded with vitamins A and C. Also try this recipe as a colorful "bed" for broiled chicken or seafood.

Preparation Time: Approximately 10 minutes

Cook Time: Approximately 4 minutes

Poke a few holes in the spinach bags and microwave them on high (2 at a time) for 4 minutes, until the spinach is wilted; drain. While the spinach is cooking, toss feta, chopped olives and olive oil in a serving bowl. Add the spinach, and toss to coat. Season with salt and pepper.
