ARTICHOKE RICE SALAD 
2 boxes chicken Rice-A-Roni
3/4 c. green pepper, chopped
8 green onion, chopped
16 stuffed olives, sliced
2 (6 oz.) jars of marinated artichoke hearts, cut up
2/3 c. mayonnaise
1 tsp. curry powder

Cook rice according to directions omitting butter. Cool. Add peppers, olives, onions and drained artichokes. Save artichoke marinade and mix with mayonnaise and curry powder. Add this to rice mixture. Toss and chill for at least 5 hours. Makes a lot! Great with fried chicken.
