ARTICHOKE RICE SALAD ALA INDIA 
2/3 c. chopped chicken breasts
Chicken flavored Rice-A-Roni
2 jars artichoke hearts (marinated)
1/2 c. mayonnaise
1/2 diced green pepper
2 sliced green onions
10 sliced pimento stuffed olives
1/2 tsp. curry powder

Mix cooled chicken, rice, green pepper, onions and olives. Drain artichokes. Save marinade from one jar and add to mayonnaise, curry. Combine the chicken, artichokes and rice mixture with the dressing. Toss lightly. Cover and chill. Better made the day before. Serves 8.
