ARTICHOKE RICE SALAD 
1 pkg. chicken or beef Rice-A-Roni mix
4 green onions, sliced thin
1 green pepper, chopped
1 sm. can pitted black sliced olives
2 (6 oz.) jars of marinated artichoke hearts
3/4 tsp. curry powder
1/3 c. mayonnaise

Cook Rice-A-Roni as directed on package (omit butter). Cool in large bowl, add onions, peppers, and olives in bowl. Drain artichokes (reserve marinade). Cut artichokes in half and add to mixture in bowl. Combine mayonnaise, curry powder, marinade and mix well. Toss lightly. Chill 2 hours.
