BUCKWHEAT PANCAKES 
1 c. buckwheat flour
1 c. white flour
1 tsp. salt
1 tbsp. sugar
2 1/4 c. milk
1 beaten egg
4 tsp. baking powder for sweet milk
1 tsp. baking soda and 2 tsp. baking powder for sour milk
1/4 c. melted shortening

Beat together all ingredients - drop by tablespoonsful on a greased griddle. The batter will keep for a week.
