HOPPING JOHN 
1 can black-eye peas
1-2 tbsp. bacon grease or butter
1 sm. onion, chopped
1/4 tsp. garlic powder
4-6 oz. bacon or ham or Canadian ham, cooked and cut
2 c. hot cooked rice
Cayenne pepper to taste

Saute onion in grease until tender. Add peas, garlic, meat and cayenne and stir. Simmer 15 minutes and serve over rice.
