PEACH COBBLER 
8 to 10 fresh peaches, peeled and sliced
2/3 c. sugar
4 tbsp. water
2 3/4 c. Bisquick
1 c. sugar
2 tsp. cinnamon
2 eggs, beaten
1/2 c. butter, melted

Spread fruit on bottom of 13x9 inch pan. Sprinkle water and 2/3 cup sugar over fruit. Mix together Bisquick, cinnamon and 1 cup sugar in a bowl, stirring in beaten eggs. Stir until crumbly. Pour topping mix over peaches; then pour melted butter over topping mix. Bake 25 minutes at 400 degrees until browned. Serve with milk or cream.

My first time making this cobbler and I added extras to it, we live in high altitude so my version was to accommodate that. I cut the sugar down to go on top of the peaches, using only 1/3 & 1/4 cup sugar. I added 1/4 tsp. nutmeg & instead of 1 cup sugar I used 1/2 cup brown sugar & 1/2 cup white sugar to the Bisquick mixture. The mixture was a bit dry so I added drops of water at a time, not too much. I increased the bake time to 30 minutes, and served with ice cream. My husband really liked it and asked me to add that to our regularly used recipes. Thanks so much!!
