BRAZIL NUT CAKE 
1 lb. nuts (1/2 Brazil nuts and 1/2 walnuts), chopped
1 jar maraschino cherries, well drained (8 oz.)
1 lb. dates, chopped
3/4 c. flour, sifted
3 eggs, well beaten
1 tsp. vanilla
1/2 tsp. salt
3/4 c. sugar
1/2 tsp. baking powder

Beat eggs until thick and foamy, add sugar, flour, baking powder, salt and vanilla. Mix well. Add nuts, dates and cherries. Grease large loaf pan and line with waxed paper. Bake at 300 degrees for 40 minutes. This makes a perfect Christmas cake.
