GERMAN POTATO SALAD 
7 med. potatoes
2 c. mayonnaise
Salt to taste
Pepper to taste
Pimentos (optional)
2 eggs
1/2 c. onions
1/2 c. parsley
1 tbsp. vegetable oil

Boil 7 medium potatoes until soft in the middle. They should be firm. Peel potatoes while hot. When cool, dice into large bowl. Dice 2 boiled eggs and mix with potatoes. Add diced onions and parsley (pimentos also, if you'd like). Store in refrigerator overnight. Just before serving, add mayonnaise, salt, pepper, and vegetable oil. If salad is dry, add a little water (vegetable oil can be replaced by bacon grease). Salt and pepper added to suit taste.
