CHEESY CHIVE STUFFED POTATOES 
3 lg. baking potatoes
Vegetable oil
1/2 c. buttermilk salad dressing
1/3 c. chopped chives
2 tbsp. melted butter
1/8 tsp. salt
1 1/2 c. cheese of choice

Wash potatoes and rub with oil. Bake at 400 degrees for 1 hour or until done. Allow potatoes to cool to touch. Cut in half lengthwise; carefully scoop out pulp, leaving shells intact. Chop pulp with fork. Combine potato, salad dressing and remaining ingredients; stir until blended, will be lumpy. Stuff shells with mixture. Bake at 300 degrees for 10 minutes or until thoroughly heated. Before baking, top with shredded cheese. Add any favorite spices, bacon or mushrooms, too!
