AUGUST GARDEN CASSEROLE 
1 zucchini, 3" diameter
2 tomatoes, 3" diameter
1 lb. onion
1/4 c. grated parmesan cheese
1/4 c. bread crumbs or wheat germ
1/2 tsp. finely chopped fresh basil
1 tbsp. butter
Salt and pepper

Cut the zucchini and tomatoes in 1/2 inch slices, the onion in thin slices. Place alternating sliced in an oiled baking dish. Mix together cheese, crumbs and basil. Sprinkle over vegetables. Dot with butter. Add salt and pepper to taste. Bake at 350 degrees for 30 minutes. Delicious! this may be prepared ahead, baked until nearly done, and frozen.
