MANDARIN-CRANBERRY SALAD 
1 env. unflavored gelatin
2 tbsp. sugar
1/4 tsp. salt
1 (11 oz.) can mandarin oranges
2 tbsp. lemon juice
1 (16 oz.) can whole cranberry sauce
1/2 c. finely diced celery
1/4 c. chopped pecans
Salad greens

In saucepan mix together gelatin, sugar and salt. Drain mandarin oranges, reserving the syrup. Stir syrup into gelatin mixture. Heat, stirring constantly, over a low heat, until gelatin and sugar are dissolved. Remove from heat. Add lemon juice, cranberry sauce, celery and pecans. Arrange orange slices in 9 individual ring molds or in 1 1/2-quart ring mold. Spoon in cranberry mixture. Chill until firm. Unmold on salad greens. Serves 9.
