CRANBERRY JELLO SALAD 
2 small boxes strawberry jello
1 cup sugar
1 (16 oz) bag cranberries, ground, chopped
1 bag walnuts, ground, chopped
1 can crushed pineapple
1 small can mandarin oranges
3 cups hot (boiled) water

Mix Jello and sugar in a 9 x 13” dish. Add boiled water and the juice of the crushed pineapple, stirring until Jello and sugar mixture is dissolved. Allow to cool.

Add ground/chopped cranberries and walnuts, crushed pineapple and mandarin oranges, mixing well.

Chill overnight.

Thanks for posting this recipe. My Grandma made it years ago. She just used 1 naval orange, walnuts, a bag of cranberries and cup of sugar. Next time I will try the crushed pineapple. She never had the water written down in her recipe so I never knew how much to use.

My grandma also made a very similar salad to this one, using a whole orange (peel and all) rather than pineapple. Her recipe also calls for celery (maybe a cup?, very finely chopped), which sounds terrible but is actually quite good. Also, she let the jello partially set before adding in all the rest of the stuff so the solid bits (nuts, cranberries etc) don't all settle on the bottom.

My mom's cranberry salad is a hit and always requested for Thanksgiving and other holidays. She uses 8 oz. crushed pineapple, 1/2 cup cranberry juice, 2 tbsp. lemon juice, 1 pkg. raspberry jello, 1 can whole berry cranberry sauce and 1/2 cup chopped celery. Walnuts are optional but mostly great in my opinion. Put reserved pineapple juice, cranberry juice and lemon juice to boil. Add gelatin. Put in cranberry sauce and after cooled add pineapple and celery (nuts if desired). Enjoy!

I use raspberry or cranberry gelatin - make a brighter red. Nuts - 1 to 1 1/2 cups. In addition to recipe I add 2 oranges, unpeeled - ground.

My mom's made this cranberry salad for years. Think she put in chopped celery & mandarin oranges with the walnuts. Always used cranberry jello- not the same without it. Now mom's passed away- we miss her so much and so this recipe is a part of her we'll cherish for the rest of our lives.
