REUBEN CASSEROLE 
1 (16 oz.) can sauerkraut
12 oz. corned beef, canned, sliced, crumbled or torn
2 c. Swiss cheese, shredded
1/2 c. lite mayonnaise
1/4 c. Thousand Island dressing
2 fresh tomatoes, sliced
1/4 c. pumpernickel or rye bread crumbs

Place sauerkraut in 1 1/2 quart baking dish. Top with a layer of beef, thin layer of cheese. Combine both dressings, spread over cheese. Top with tomato slices, set aside. Take 2 tablespoons butter in small pan, melt either butter and add bread crumbs and brown lightly. Sprinkle over tomato slices. Bake at 350 degrees for 45 minutes. If putting in microwave, bake 12 to 14 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
