JIFFY REUBEN CASSEROLE | |
1 lb. can sauerkraut, drained 1/4 c. onion, chopped 1/4 c. parsley, chopped 1 tsp. caraway seed 2 c. Swiss cheese, grated 2/3 c. Thousand Island dressing 1/2 lb. corned beef, cooked and thinly sliced 3 slices rye bread, cut into 1/2-inch cubes 1/4 c. butter, melted Combine sauerkraut, onion, parsley and caraway seed and toss to mix well. In 8 x 8-inch baking dish, layer sauerkraut mixture, 1 cup cheese, 1/3 cup dressing and the corned beef. Top with remaining cheese and dressing. Toss bread cubes with melted butter and sprinkle over casserole. Bake at 375 degrees for 35-40 minutes. Serves 4. |
