SWEDISH RICE PUDDING 
2 c. milk
1/8 tsp. salt
1/4 c. sugar
1 tsp. vanilla
4 eggs, beaten
1 tbsp. butter, melted
1/3 c. raisins
1/2 tsp. grated lemon rind
1 tsp. lemon juice
2 c. cooked rice
1/2 - 1 tsp. cinnamon for top of pudding

Combine and sprinkle with cinnamon. Bake 40-50 minutes in a moderate oven, 325 degrees. Serve warm or chilled with cream.

At Christmas time, one almond is mixed into the rice pudding. The person who finds the almond in his or her serving will marry within the year or have good luck! It is also served with crushed, sweetened strawberries.
