OLD FASHIONED SWEDISH RICE
PUDDING
 
1/3 c. old fashioned rice
1/2 c. water
1/8 tsp. salt
3 c. milk
2 eggs
1/3 c. sugar
1 1/2 tsp. vanilla
Raisins (optional)

Put rice, water and salt in top of double boiler. Simmer until water disappears. Then add 3 cups of milk and cook in double boiler 2 1/2-e hours until creamy consistency, not too thick. Beat egg slightly; add sugar and vanilla.

Fold into rice, stirring 2 or 3 times; add sugar and vanilla. Fold into rice, stirring 2 or 3 times. Cook, stirring gently, until mixture sets up. Over cooking will curdle the eggs. Pour pudding into bowl and sprinkle cinnamon over. Serve with cream or fruit.

If desired, raisins should be added the last 10 minutes before the egg mixture is added.
