CHOP SUEY 
1/4 c. butter
1 1/2 c. (3/4 lb.) lean veal or beef, cut up
1 1/2 c. chopped onions
2 1/2 c. celery, cut fine
1 tsp. salt
1/4 tsp. pepper
3/4 c. hot water

Melt butter in heavy pan. Add meat and stir; sear without browning. Add onions, celery, salt and pepper. Add water. Cook until onions and celery are transparent or until meat is tender. Stir occasionally. Add:

1 can bean sprouts
1 (14 oz.) can chop suey vegetables
1 (1 lb. 12 oz.) can La Choy beef chow mein (the kind with 14 oz. can beef &
gravy on top)

Thicken to suit with:

2 tbsp. cornstarch
1 tbsp. sugar
1 tbsp. La Choy soy sauce
1/2 c. cold water

Mix well and add to chop suey.
