AMERICAN CHOP SUEY 
olive oil
1lb or so ground beef
onion (minced garlic too if you like)
salt and pepper
hot sauce- a few drops to add a kick
1 pkg frozen butternut squash
1 box wheat pasta
2 cans petite diced tomatoes
1 can tomato sauce or spaghetti sauce (whatever you have)
1 small can tomato paste
grated Parmesan cheese
mozzarella cheese

Boil pasta ahead to save time (salt the water), drain, put aside (or just put pasta in the casserole at end uncooked and cook in oven).

In large frying pan, heat 1 to 2 tsp. olive oil, sauté the onion and meat. Add salt and pepper to taste.

Add 2 cans diced tomatoes, can of tomato sauce and hot sauce. Bring to a boil. Add bag of frozen butternut squash (good fiber-I like to hide veggies in my casseroles-experiment with what you like) and cook in mixture at boil.

Thicken, if needed, with tomato paste, sprinkle grated Parmesan over mixture. Pour mixture into a large casserole, stir in hot pasta or uncooked pasta, and halfway through, add some mozzarella cheese. Add rest of pasta, top with more cheese (add cheese to taste).

Bake in 350°F oven long enough to heat through and melt cheese and/or soften the pasta.
