OYSTER SAUCE 
2 c. flour
1 lb. butter
20 c. reserved oyster stock
1 qt. half & half cream
Salt
White pepper
Cayenne pepper

Melt butter, blend with flour in saucepan over medium heat until foamy. Do not let it begin to darken. Add hot oyster stock and cream. If there is not enough liquid, add milk. Season with salt, pepper and cayenne pepper.
