CAJUN BLACK RIBS 
4 lb. pork back ribs
3 tbsp. paprika
1/2 tsp. red pepper
1 tbsp. garlic powder
2 tsp. oregano
2 tsp. thyme
1/2 tsp. salt
1/2 tsp. white pepper
1/2 tsp. cumin
1/4 tsp. nutmeg

Combine dry ingredients together and sprinkle on the surface of the ribs. Grill over indirect heat.

Camping suggestion: Parboil ribs before leaving for the festival. Combine spices in small jar. When ready to grill, proceed with directions as above. Serves 4 (700 calories per serving).
