CAJUN CAMP CHILI | |
1 to 1 1/2 lbs. ground chuck 3 med. yellow onions 1 (15 oz.) can cream style kidney beans 1 (15 oz.) can pork & beans 1 can diced Rotel tomatoes 7 oz. tomato ketchup 1 1/2 to 2 oz. chili powder (hot or not so hot) 1 tsp. garlic powder 1 tsp. salt 1 sm. bunch green onions Salt and pepper meat and fry until done. Cook chopped yellow onions in microwave on high for 5 minutes. (Do not include green onions at this point.) Combine all ingredients, except green onions, in large, heavy pot. Cover and simmer for 30 minutes, stirring every 5 minutes. Taste to make sure salt and pepper suits your own personal taste - add more if you like. Add chopped green onions; remove from heat and cover. Let stand for 30 minutes. Serve over Fritos and cheese (cheese optional). Enjoy. |
