NEW ORLEANS CHILI 
1 (14 1/2 oz.) can stewed tomatoes
1 (8 oz.) can tomato sauce
2 c. diced cooked beef
1 onion, chopped
1 green pepper, chopped
1 tbsp. chili powder
1/2 tsp. cumin (optional)
1/8-1/4 tsp. cayenne pepper
1 (15 1/4 oz.) can kidney beans

In large saucepan, combine all ingredients except kidney beans. Cover and simmer 15 minutes. Stir in beans and simmer uncovered 10 minutes. Garnish with shredded Cheddar cheese. 6 servings. Can be served as a topping on a green salad.
