SPRING MUFFINS - RHUBARB 
1 1/4 c. brown sugar
1/2 c. oil
1 egg
2 tsp. vanilla or maple
1 c. buttermilk
1 1/2 c. rhubarb, cut & diced
1/2 c. nuts, chopped
2 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Combine first five ingredients. Add remaining ingredients.

TOPPING:

1 tbsp. butter, melted
1/2 c. brown or white sugar
1 tsp. cinnamon
